RODI Plumbing suggestion

So I'm in the process of installing a RO/DI unit at work for our office tank. I'm not the most proficient in plumbing so I thought I seek some help from the community. We currently have a water dispenser already tapped in under the sink, so I would be teeing off the existing 1/4" polyethylene tubing. I dug out a few tees and valves. I was wondering what would be the best way to tee off the line. Do I need any check valves?

Option 1 - connect a tee, then a ball valve after that

Option 2 - use this 3 way valve I had.

Any advantages, disadvantages or does it not matter at all? Just trying to make sure I'm doing this right.
