Building a large tank out of wood need to know about waterproofing?

Hello,

I would like to know about waterproofing a roughly 2000 gallon tank I'm building. I couldn't find the size and shape tank I wanted so I decided to make my own out of pallets and pressure treated 4x4's. This tank is not going to be aesthetically please purely structural. I have framed it out and about to sheet the inside. Was thinking on using plywood and finishing with food safe epoxy and then line with pond liner, or even fiber glass. Then I thought what about lexan or acrylic sheets? It would allow for some viewing pleasure and be most waterproof.

The question is if I were to go with the transparent sheets and I have spaced the vertical posts only 8 inches apart would the coincide with lowering the thickness of the sheet? As the thicker transparent sheet are really expensive. Or would you still need a thick sheet? Any advice is much appreciated.
