What is this creature?

Can anyone tell me what this is? I took it while snorkeling down in Mexico.

The body was really soft and it poppies out its back...it was the weirdest thing.

Definitely Gulf of Mexico Variety is exactly what they looked like. There were tons of them! Thanks.
