Dosing sugar in my 18g saltwater tank (NSW)

I did quarter spoon sugar dosing in my tank . I could see skimmer skimming foams now . Now I just have hermit crab . I have my fishes to cousin. Yet to add corals .
Any advice in dosing sugar ?
I really have no idea. I have heard that it would reduce nitrite .

after you cousin your fishes you could add another quarter spoon of sugar, get some tank water and mix in your mouth first, then add to your tank, dont want it too concentrated
